If OP got windows 10 with bootcamp, or used wine and chose directX it would be significantly faster than trying to play in Macos.

I have a mac and have had the exact same problem as OP, macos just does a terrible job supporting any of the graphics backends used by Dolphin. I checked passmark and it scores within 10% on single core performance of my even older MacBook's i5 which could run dolphin games at 60fps with bootcamp windows 10. On passmark (which I know isn't a particularly good benchmark) it's rated as about equivalent to a ten year old i5. I never claimed that it was, I just pointed out that OP's M5 performs about the same as my even older mobile i5 chip. This isn't a MacBook air, it's a MacBookTM with a core m processor, it's like a 5 watt chip, it's hot garbage. Graphics: Any reasonably modern graphics. Processor: Fast CPU with SSE2 supported (recommended at least 2Ghz). And dolphin itself has been around long before any of the core-I processesors even existed. Triforce that lets you run Wii/GCN/Tri games on your Windows/Linux/Mac PC system. It is by no means a super demanding program.
